Ingredients
2 ripe bananas, mashed
1 cup old-fashioned rolled oats
1 cup cottage cheese
2 large eggs
1/4 cup maple syrup or honey
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup all-purpose flour or oat flour
Optional: 1/4 cup chopped walnuts or chocolate chips
Instructions
Preheat the oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan with parchment paper.
In a large bowl, mash the bananas. Add cottage cheese, eggs, maple syrup, and vanilla. Mix until well combined.
Stir in oats, cinnamon, nutmeg, baking powder, baking soda, and salt. Mix gently.
Add the flour and stir until just incorporated. Fold in any optional add-ins like walnuts or chocolate chips.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

You can substitute honey with maple syrup for a vegan-friendly sweetener.
