Description

This BBQ Chicken Flatbread is the ultimate 15-minute weeknight lunch. Crispy naan topped with tangy barbecue sauce, tender rotisserie chicken, melted smoked Gouda, and zesty red onions. A faster, lighter alternative to traditional pizza.


Ingredients

2 plain naan flatbreads (or store-bought pizza crusts)

1 cup cooked shredded chicken (rotisserie works best)

1/2 cup BBQ sauce (thick, sweet variety like Sweet Baby Ray’s)

1 cup shredded mozzarella cheese (low-moisture)

1/2 cup shredded smoked Gouda cheese

1/4 cup red onion, thinly sliced into rings

2 tablespoons fresh cilantro, chopped

1/4 cup sweet corn kernels (optional)


Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.
  2. Pre-bake Crust: Place the plain naan flatbreads on the baking sheet and pre-bake for 3–4 minutes. This ensures the crust stays crispy and doesn’t get soggy from the sauce.
  3. Add Sauce: Remove from oven and spread a thin, even layer of BBQ sauce over each flatbread, leaving a small border for the crust.
  4. Layer Ingredients: Mix the shredded chicken with 1 tablespoon of BBQ sauce in a small bowl. Sprinkle the mozzarella and smoked Gouda over the flatbreads first, then top with the sauced chicken, red onion rings, and corn (if using).
  5. Bake: Bake for 10–12 minutes until the cheese is bubbly, melted, and the edges of the flatbread are golden brown and crispy.
  6. Garnish and Serve: Remove from oven, sprinkle immediately with fresh chopped cilantro, slice, and serve warm.

Notes

Cheese Tip: Grate your own smoked Gouda for the best melt. Pre-shredded cheese contains anti-caking agents that can make it grainy.

Make it Crispier: If you like extra crispy cheese, switch the oven to “Broil” for the last 60 seconds, but watch it closely so it doesn’t burn!

Storage: Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in an air fryer at 350°F for 3-4 minutes for the best texture.
