  • 1/2 cup old-fashioned rolled oats

  • 1/2 cup unsweetened almond milk (or milk of choice)

  • 1/4 cup plain Greek yogurt

  • 1 tablespoon chia seeds

  • 1 tablespoon maple syrup (optional)

  • 1/2 teaspoon vanilla extract

  • 1/2 cup fresh or frozen blueberries

  • Pinch of salt

  • Optional toppings: extra blueberries, granola, sliced almonds, drizzle of nut butter


Instructions

  • In a mason jar or airtight container, combine oats, almond milk, Greek yogurt, chia seeds, maple syrup, vanilla extract, and a pinch of salt.

  • Stir in the blueberries gently.

  • Cover and refrigerate overnight or for at least 4 hours.

  • In the morning, give the oats a stir. Add a splash of milk if it’s too thick.

  • Top with extra blueberries, granola, or a drizzle of nut butter before serving.

Notes

Frozen blueberries work great—no need to thaw.
