This easy garlic butter shrimp scampi recipe features succulent shrimp in a rich, garlicky butter sauce made with a savory broth. It’s a fantastic, flavorful dish that’s ready in under 20 minutes!
Ingredients
2 tablespoons olive oil
4 tablespoons unsalted butter, divided
4–5 cloves garlic, minced
1 1/4 pounds large shrimp, peeled and deveined
1/4 cup chicken or vegetable broth
1/2 teaspoon red pepper flakes (optional)
2 tablespoons fresh lemon juice
1/4 cup fresh parsley, chopped
Salt and black pepper to taste
Instructions
Heat olive oil and 2 tablespoons of butter in a large skillet over medium-high heat until the butter is melted and bubbly.
Add the minced garlic and sauté for 30-60 seconds, stirring constantly, until fragrant. Be careful not to let it brown.
Add the shrimp to the pan in a single layer and season with salt and pepper. Cook for 1-2 minutes on one side until they begin to turn pink.
Flip the shrimp, then pour in the chicken or vegetable broth and add the red pepper flakes (if using). Simmer for 1-2 minutes until the shrimp are cooked through.
Remove the skillet from the heat. Stir in the remaining 2 tablespoons of butter, the fresh lemon juice, and the chopped parsley until the butter melts, creating a glossy sauce.
Toss everything to combine and serve immediately.
Notes
