Description

This gorgeous grilled chicken with bruschetta is a fresh, flavor-packed meal that comes together in under 30 minutes. Juicy grilled chicken is topped with a vibrant tomato and basil topping for the perfect healthy summer meal.

For the Grilled Chicken:

4 boneless, skinless chicken breasts (about 6oz each)

1 tablespoon olive oil

1 teaspoon Italian seasoning

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and freshly ground black pepper to taste

For the Bruschetta Topping:

2 cups Roma tomatoes, diced

2 cloves fresh garlic, minced

1/4 cup fresh basil, thinly sliced

1 tablespoon extra virgin olive oil

2 tablespoons balsamic glaze, for drizzling


Instructions

  • Make the Bruschetta Topping: In a medium bowl, combine the diced tomatoes, minced fresh garlic, sliced basil, and 1 tablespoon of extra virgin olive oil. Season with a pinch of salt and pepper and stir gently. Set aside to let the flavors meld.

  • Season the Chicken: Pat the chicken breasts dry. Drizzle with 1 tablespoon of olive oil and season generously on all sides with Italian seasoning, garlic powder, onion powder, salt, and pepper.

  • Preheat Grill: Preheat your grill or an indoor grill pan over medium-high heat (about 400-450°F).

  • Grill the Chicken: Place the chicken on the hot grill. Cook for 5-7 minutes per side, until cooked through and showing beautiful grill marks. The internal temperature should reach 165°F.

  • Rest the Chicken: Transfer the grilled chicken to a clean platter and let it rest for at least 5 minutes. This is crucial for keeping it juicy!

  • Serve: Top each rested chicken breast with a generous spoonful of the fresh bruschetta topping. Finish with a drizzle of balsamic glaze and serve immediately.


Notes

Don’t Skip the Rest! Letting the chicken rest before topping and serving is the secret to keeping it incredibly moist and tender.

Use Good Tomatoes: Since the bruschetta is the star, use the ripest, most flavorful tomatoes you can find for the best results.

No Grill? No Problem: You can easily cook the chicken in a skillet on the stovetop over medium-high heat for 6-8 minutes per side.
