Description

A quick and easy recipe for healthy and delicious turkey taco bowls, perfect for a weeknight dinner or meal prep. This recipe is packed with lean protein and fresh vegetables, making it a satisfying and nutritious meal for the whole family.

DIY TACO SEASONING

1 tbsp chili powder

1 ½ tsp ground cumin

1 tsp dried oregano

¾ tsp sweet paprika

½¾ tsp garlic powder

¼ tsp cayenne pepper (or extra to make it spicy)

salt to taste

FOR THE TACO BOWL BASE

1 pound 93% Lean Ground Turkey

1 small yellow onion, diced

taco seasoning (see recipe above)

1 tbsp tomato paste

¼½ cup water

2 cups cooked rice

2 cups chopped or shredded romaine lettuce

1 can black beans (drained and rinsed)

12 cups corn (canned or cooked from fresh or frozen)

¼½ cup sour cream

TASTY TOPPINGS (choose your favorites)

diced tomatoes or fresh salsa

guacamole or sliced avocado

thinly sliced red onion (raw, sautéed, or pickled)

tortilla chips or corn chips

fresh cilantro and/or chopped scallions

sliced jalapeño peppers

grated cheddar cheese

lime wedges

taco sauce or Mexican hot sauce


Instructions

  • Make the Taco Seasoning: To make the DIY taco seasoning, combine chili powder, ground cumin, dried oregano, sweet paprika, garlic powder, cayenne pepper, and salt in a small bowl and mix.

  • Sauté the Onion: In a large skillet over medium-high heat, heat oil until shimmering. Add diced onion and cook until tender for approximately 5 minutes.

  • Toast Spices and Brown the Turkey: Stir in the prepared taco seasoning and tomato paste and cook while stirring constantly for about 30 seconds until fragrant. Add the ground turkey and cook, stirring occasionally, until almost cooked through but still slightly pink, about 2-3 minutes.

  • Simmer the Sauce: Stir in water and simmer on low until the mixture is saucy, thickened, and the turkey is cooked through. Season with any additional salt to taste.

  • Assemble the Bowls: Divide the cooked rice, lettuce, black beans, and corn between 4 bowls. Top with the prepared turkey taco meat and a dollop of sour cream.

  • Add Toppings: Add all of your favorite toppings and mix-ins from the list, such as diced tomatoes, guacamole, cheese, and cilantro.


Notes

Expert Tips: Don’t skip toasting the spices—it deepens the flavor! Make sure to break up the ground turkey well as it cooks. You can also meal prep the meat up to 3 days in advance for quick assembly.

Storing & Reheating: Store the turkey taco meat in an airtight container in the refrigerator for up to 4 days. Keep cold toppings like lettuce and chips separate to prevent them from getting soggy.
