Ingredients (Serves 4):

  • 1.5 lb chicken thighs (bone-in, skin-on)
  • 1 lb russet potatoes, 1” cubes
  • 8 oz green beans, trimmed
  • 1 onion, sliced
  • 4 garlic cloves, minced
  • 2 cups low-sodium chicken broth
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 2 sprigs fresh thyme
  • Salt & pepper to taste

Instructions

Instructions:
1️⃣ Sear Chicken: Heat oil + butter in Dutch oven. Brown chicken skin-side down 5 mins per side. Remove.
2️⃣ Sauté Veggies: Cook onion + garlic 2 mins. Add potatoes + green beans; stir to coat.
3️⃣ Simmer: Return chicken to pot. Add broth + thyme. Cover, simmer 25 mins until chicken hits 165°F.
4️⃣ Rest: Let stand 5 mins. Garnish with parsley.
