Description

This refreshing summer peach fruit salad combines juicy, ripe peaches with a vibrant medley of fresh berries, watermelon, and pineapple, all tossed in a zesty honey-lime dressing for the perfect, easy side dish.


Ingredients

4 medium Ripe Peaches, sliced

1 cup Blueberries

1 cup Strawberries, sliced or quartered

1.5 cups Watermelon, seedless, cut into bite-sized cubes

1 cup Pineapple, fresh, cut into bite-sized chunks

2 tbsp Fresh Lime Juice

1 tbsp Honey

1 tbsp Fresh Mint, chopped

Optional: 1/4 cup Feta Cheese, crumbled


Instructions

  • Prepare the Fruit: Gently wash and dry all your fruit. Slice the peaches into wedges, slice the strawberries, and cut the watermelon and pineapple into bite-sized cubes.

  • Combine in a Bowl: Add the prepared peaches, blueberries, strawberries, watermelon, and pineapple to a large mixing bowl.

  • Make the Dressing: In a small bowl, whisk together the fresh lime juice, honey, and chopped mint until the honey is fully dissolved.

  • Gently Toss: Drizzle the honey-lime dressing over the fruit. Use a large spoon or spatula to gently toss everything together until just combined.

  • Add Your Extras (Optional): If you’re using it, now is the time to gently fold in the crumbled feta cheese.

  • Chill Before Serving: For the best flavor, cover the bowl and let the salad chill in the fridge for at least 15-20 minutes. This little rest lets the flavors meld together beautifully.


Notes

Best Peaches: Look for freestone peaches that are fragrant and slightly soft to the touch for the best flavor and easiest preparation.

Best Texture Tip: For the crunchiest salad, you can mix all the other fruits first and gently fold in the cubed watermelon just before serving. This prevents the salad from becoming too watery if it sits for a while.
